Crisp potato chips tossed in a salted egg yolk emulsion with curry leaves, garlic, & bird’s eye chili
Vietnamese Spring Rolls
Rice paper rolls with prawns, herbs, crunchy veg, vermicelli noodles, served with a tangy dipping sauce
Steamed Cabbage with Aromatic Soy
Tender cabbage in a fragrant light sauce infused with garlic, coriander, and chili
Sticky Pork Belly & Rice
Slow-braised pork belly cooked in beer broth with soy and five spice, served with sticky rice

Glass noodles in a gingery chicken broth with herbs, poached chicken, and garlic oil

Refreshing trio of pineapple, watermelon, and papaya
Cookies & Ice Cream with Vietnamese Coffee Syrup
Double choc chip cookies paired with malai ice cream & finished with a drizzle of Vietnamese coffee syrup

About the facilitator
Nina is a (self-proclaimed) home chef who’s been whipping up meals for the past 4ish years. She grew up across Bombay, Singapore, and London, and her food is very much a reflection of her third-culture-kid identity and the flavors she’s collected while traveling.
Over the years, she’s hosted countless dinner parties for friends and this night at Method Bandra is an extension of those evenings, just with a bigger table. Her recent trip to Vietnam sparked the inspiration for this one, so expect a menu that leans Vietnamese but with her own twist :)
